Spinach Risotto

  • 1 cup frozen spinach
  • 1 cup rice
  • 1 tablespoon chicken flavored seasoning
  • 1/2 cup skim milk
  • 4 ounces low fat mozzarella

in a medium pot, add 2 cups water, 1 cup uncooked rice, spinach and seasoning. cook according to rice instructions. when done, add mozzarella and milk. stir thoroughly and serve hot.
