- 1 1/2 cups brown rice, uncooked
3 1/2 cups Apple Juice, divided
1 apple, diced
1/2 cup onion, chopped
1/2 cup sliced celery
1/3 cup raisins (optional)
1/2 teaspoon poultry seasoning (thyme, rosemary, sage)
1/4 teaspoon pepper
2 teaspoons butter or margarine
1/3 cup bran
1/3 cup slivered almonds
- Prepare rice according to package directions, using 3 1/4 cup apple juice for the liquid.
- Cook diced apple, chopped onion, sliced celery, raisins, poultry seasoning, and pepper in butter in a large skillet until the vegetables are tender-crisp. Stir in the cooked brown rice, bran, slivered almonds, and remaining apple juice.
- Use as stuffing for poultry or pork roast, or bake at 350 degrees for 35 minutes.
